Whole Wheat Pasta with Kale and Roasted Cherry Tomatoes

First, oven roast some cherry tomatoes. I filled the toaster oven tray (at work) with cherry tomatoes, olive oil, salt and pepper, and let them cook at 300 deg, probably, for a good while.

Get your pasta cooking at some point, don’t wait til the “sauce” is done before you start, or dinner will be even later than usual! I used maybe half a package of whole wheat ziti that was open in the pantry drawer.

Saute: Olive oil, 1 lg garlic clove, abt 1/8 sliced onion.
Add: 1/3 to 1/2 bunch of kale, chopped.
Simmer a while with addl olive oil and white wine.
Add red pepper flakes, S&P to taste (that’s kosher salt and fresh ground pepper).
Stir in the pre-roasted cherry tomatoes and heat thru.

Mix together, add generous amt grated parmesan cheese. Serve right away.
