Our house is being rented by some lovely families for the summer.
New cooking challenge: what to cook when I’ve been transported back to our old kitchen-less days. I have a microwave, two-burner hotplate, toaster oven. Have my eye on a gas/charcoal combination BBQ.
SO, here’s what we had for our 4th of July lunch:
Fresh Corn Salad
2 ears of fresh corn, cut off the cob
1 can black beans, rinsed and drained
4 green onions, sliced in rounds
zest and juice of one lime
salt & fresh ground pepper
If you have some chopped cilantro, put it in. Maybe some chopped red pepper, that would be pretty.
I’ve just gotten most of my pantry organized. Hoping to figure out some fun things to eat. It is too sad to eat restaurant food all the time.
